Base: Fry onion in oil (2 mins). Add tomato paste, harissa, and spices. Sauté until fragrant.

Stew: Add meat, cover with water. Simmer 45 mins. Add harder veggies (carrots, turnips).

Steam: Prepare couscous per package instructions (steam over broth is best).

Finish: Add soft veggies (zucchini, chickpeas). Cook 30 mins more. Fluff couscous with sauce.

Simmer: Add tomatoes and spices. Cook down to a thick sauce (15 mins).
